Broccoli Red Quinoa Salad with Corn and Black Beans

This scrumptious little salad was my lunch for three days in a row this week.  I made a huge bowl and stored it in the refrigerator. I scooped some out each morning to take to work. The first day it was great, the second day it was even better because the dressing had soaked into the veggies, and on the third day it was still good but skimpy on the broccoli. I think I picked most of it out trying to put more broccoli into my first two servings.  And I lost 2 lbs this week!

Spinach, Basil, Tomato Quiche

I decided to make quiche this morning. I’ve never made quiche, but I’ve been craving one since last spring when I spent a few days in Louisiana with a really good cook, my sister’s mother in law, Yoland. She lives in a little Cajun cabin on the river and serves the most delicious food. One morning she served us quiche, and it was so tasty. I thought I try to make something like that this morning.

Daddy’s Biscuits: Crispy, Flakey, and Moist

Daddy’s biscuits are not the prettiest (but they could look more like regular biscuits, and I’ll explain how later; Daddy is all about taste and speed). The biscuits he makes have an geometrical shape, maybe a rhombus or something like that, but definitely not circular because Daddy doesn’t care about biscuit appearances. (Though, he does however, care about his own physical appearance; another story for another day).  Daddy thinks it’s faster and easier to cram those biscuits together and mash them down until they are all touching like a pie. ??? I don’t understand why…

Grilled Italian Salad

A beautiful evening calls for a grilled dinner on the deck. Tonight we attempted a grilled Italian salad and it turned out to be a hit with everyone, even Daddy who only likes heavy foods such as rice and gravy or anything made with a roux and plenty of meat. The meat substitute for tonight was our favorite portabella recipe that I will post later this week.
